  1. Using the Herb Chopper, blend the raspberries until smooth. Sieve through the Chinois to strain out the raspberry seeds.

  2. Put the coulis together with the sugar in the Chef Series Cottage Saucepan 1.4L. Bring to simmer and cook for approx. 5 min. until the sugar is dissolved. Pour the agar agar powder and continue cooking and stirring for 2 min.

  3. Place the SBF Mini Dome in the Freezer Mate Large Low 2.25L.

  4. Evenly divide the contents of the Saucepan in the cavities of the SBF Mini Dome.

  5. Refrigerate for at least 8 hours before unmolding.

  6. Coat the mini domes with sugar before serving.
